Nelson Zhang

Nelson Zhang is the Executive Sous Chef at Shanghai Disney Resort, where he oversees culinary operations for all park locations. He leads the team to deliver exceptional dining experiences that align with Disney’s high standards of quality and creativity. Nelson’s Disney career began in 2016. In his role, Nelson is responsible for ideating, developing, and launching new culinary products and menus, while maintaining rigorous food safety and workplace safety standards. He leads the team to works closely with other teams at Food & Beverage to plan and implement product schedules, and provides training to the culinary team to ensure seamless product launches. Additionally, his team monitors raw material procurement and partners with the sourcing team to maintain supply chain efficiency. In 2019, Nelson received the prestigious Disney Legacy Award, Disney Experiences’ highest honor, which recognizes exceptional individuals within the organization. Before joining Shanghai Disney Resort, Nelson built a strong foundation in the culinary industry, holding key roles such as Executive Sous Chef and Sous Chef at renowned hotel brands. Nelson graduated from the Tourism School Affiliated to Shanghai Tourism College in 2001. His culinary excellence has been recognized internationally, including a bronze medal at the World Chef Team Competition in Thailand (2013) and a silver medal at the 6th FHC Culinary Arts Competition in Shanghai (2004). 张古昇现任上海迪士尼度假区行政副总厨，负责管理乐园内所有区域的厨房运营工作。他带领团队打造卓越的餐饮体验，始终秉承迪士尼对质量和创意的高标准。 张古昇的迪士尼之旅始于2016年。他负责新餐饮产品及菜单的构思、开发与落地，同时确保严格执行食品安全与工作场所安全标准。他带领团队与餐饮部其他团队紧密协作，规划并落实产品计划，同时为厨务团队提供培训，以确保新产品的顺利推出。此外，他的团队还负责监管原材料采购，并与采购团队合作，确保供应链的高效运作。 2019年，张古昇荣获华特迪士尼典范传承大奖，这也是迪士尼体验板块的最高荣誉，旨在表彰公司内部的杰出个人。 在加入上海迪士尼度假区前，张古昇已经在餐饮行业打下了坚实的基础，包括担任知名酒店品牌行政副总厨、副厨师长等关键岗位。 张古昇于2001年毕业于上海旅游高等专科学校附属旅游学校。他凭借精湛的厨艺在国际上屡获殊荣，包括2013年在泰国世界厨师团体赛中荣获铜牌，以及2004年在上海第六届FHC烹饪艺术大赛中摘得银牌。
