Short biography
Philippe Daue is the Director of Food & Beverage at Shanghai Disney Resort, where he leads the Food & Beverage operations for the entire resort, including the park, Disneytown, and the resort’s two themed hotels. In his role, Philippe also chairs the FSSC22000 Committee and ensures food safety compliance for daily operations. Philippe joined Shanghai Disney Resort in March 2022 as Culinary Director. He was responsible for all kitchen operations, receiving areas and stewarding, while contributing to the design and execution of new Food & Beverage concepts. Prior to his role at Shanghai Disney Resort, Philippe held Executive Pastry Chef positions at prestigious hotels globally and served as Corporate Executive Chef Pastry & Baked Goods (Global) at a famous Chocolates brand. His expertise spans fine dining, large-scale banqueting, and retail operations, with a consistent focus on quality and innovation. Philippe holds a HACCP Certificate from the Royal Institute of Public Health & Hygiene (UK) and is a graduate of the Hotel School “Ter Duinen” in Koksijde, Belgium. He is also internal auditor of ISO 9000 Systems Training.
