Nicole Holtzman

Nicole Holtzman is an operator who builds the AI system she teaches. She runs live F&B operations for venues nationwide and works hands-on in AI herself, from prompting to model selection and system design. Michelin trained, with a background in food and beverage at Disney. She evaluates AI from the operator side by what it actually delivers in a working operation. She is the founder of SOPros and, working alongside a development team, created an AI forecasting and execution platform, which predicts sales and turns those predictions into valuable tools for operations, such as order guides and prep lists. Nicole now serves as an IAAPA Education Premier contributor, a mentor through the Apify Mentorship Program, while also receiving Brass Ring recognition the last two years
